This recipe was a total improvisation and actually it was made in the process of cooking. My idea was to make cabbage rolls with Quorn mince. To make it less boring while frying the mince with mushrooms and onion, I decided to add some grated carrot. When all that was mixed I came up with the idea that addition of linseeds would make the filling more gluey, like when you add barley. And because my linseed jar stands next to the sunflower seeds I grabbed a handful of them as well. To finish and add extra flavour added couple dried cep mushrooms, you just need a couple pieces to bring the wonderful mushroom flavour.
I like the idea of no flour crepes so much that each time I see a new way to make them I have to try. This is one of flour free keto crepe recipes I found on Instagram (@keto_loversi), made with only two ingredients: eggs and nut butter. Comparing to other keto two ingredients recipe (eggs and cream), these are more crispy and stiff, but they are still very fulfilling.
As we decided that occasionally we will include bread to our diet I came up with the idea, that it will be much healthier and definitely more tasty to eat home baked bread, rather than supermarket one. As came out I’m not as big fan of bread as I thought, most of it is for my partner. And as we didn’t have sandwiches for over a year I had to look through my memory to find what we can have with a sandwich apart from butter and cheese. And I came up with idea of the sun dried tomato paste I used to make for sandwiches. This paste it’s a homemade version of one we sometimes bought in the shop. Obviously if you make it yourself it’s not only cheaper, but also you can alternate the taste by adding different spices – like chilli flakes for example.
